  • One stick of lemongrass
  • Three Kaffir Lime leaves
  • One whole lime, chopped

  • Two or three spring onions, sliced
  • Two hot red chillis, sliced
  • One small piece of ginger root, finely sliced
  • Handful of fresh coriander leaves
  • A quarter of a cucumber, finely sliced lengthways
